Ingredients

Chocolate Cake Mix
  • Cane sugar
  • Wheat flour
  • Dutch processed cocoa
  • Sea salt
  • Sodium bicarbonate
  • Baking soda

Raspberry Icing Mix
  • Cane sugar
  • Tapioca or maize starch
  • Real raspberries

May contain soy.

How to make it

Instructions

  1. Preheat oven to 175°C (fan forced). Line two 20cm round cake pans.
  2. Whisk together sour cream, eggs, and oil in a jug until combined.
  3. Add wet ingredients to cake mix and stir to combine — batter will be thick.
  4. Slowly add water in 4–5 additions, mixing well between each. Batter should be glossy and runny.
  5. Divide evenly between pans. Tap to remove air bubbles. Bake 30–35 minutes until a skewer comes out clean.
  6. Cool in pan 10 minutes, then on a wire rack until completely cold. Refrigerate once cooled.
  7. Beat butter until pale and fluffy. Add icing mix, beat until smooth. Ice the cold cake.
  8. Top with fresh raspberries if desired. Serve at room temperature.

How hard is it to make? +
Genuinely foolproof. If you can stir and set a timer, you can make this cake. Instructions are in the box and there's a how-to video via QR code if you want extra reassurance.
Can I make it ahead of time? +
Yes — the plain cake keeps in the fridge for up to a week, or freeze for up to 3 months. Iced cakes keep refrigerated for up to 3 days. In fact it's much easier to ice a cold cake than a warm one. Always bring to room temperature before serving.
Is it suitable for dietary requirements? +

Our story

Paquette isn't really a cake brand.

I actually didn't start Paquette as a cake mix brand.

I'm not a pastry chef. I'm not a dedicated home baker. I just wanted to start a business that helped people connect more. 

I missed having people over for dinner like I used to in my 20's. The deep conversations, laughing so hard you cry, the dancing in the loungeroom...

So I thought about what would make it just a little bit easier to have people over more? And that's how I came up with Paquette - fancy cake mixes for the modern hostess who loves good food, great company, and wants a shortcut that still feels special.
